From its nutritional status and its drainage properties of vineyards' soil, clay also plays an indispensable role as the main material used as a fermentation vessel - known as Qvevri - 8,000 years ago, in the Republic of Georgia, considered as the birthplace of winemaking. Object of fascination to many winemakers and wine lovers as an “old-is-new-again” method, clay vessels are in fashion nowadays, demonstrating wines with textural depth and roundness that are unique.
