WHAT IS LAMBIC?
In essence, it is a beer, but what make lambic so special is that - just like natural wine - lambic  is fermented with the ambient yeasts and bacteria native to the Zenne Valley that live on the hops grown there. These microfauna are what give Lambic this specific wine-like character with the tart acidity and delicate body. 
There are different types of lambic depending on that has been added or flavoured. What makes it so highly sought after in the world of beer is not only its unique character which is comparable to appellation systems in wine, but its ability to age. Depending on the lambic and the vintage, bottle prices vary to enormous degrees.
